The Sunday Happiness Breakfast Series – Omelette Pie, Sausages and Veggies!

Breakfast is the most important meal of the day – there just isn’t any question about that!

Starting today, The Chatore Diaries bring you some breakfast ideas, fit to serve a King or Queen.

Every Saturday we will post an idea for your Sunday morning in our series called the The Sunday Happiness Breakfast Series.

So here is idea 1.

Eggs are a quintessential part of any day.

 

We have our own twist on the humble omelette which we call the Omelette Pie. There is no difference in the ingredients, only in the method of cooking.

 

We took 6 eggs, added diced tomatoes, mushrooms, chopped onions, chopped green chillies, whole peppercorns, salt to taste and 2 tablespoons of milk. Whip whip whip till you get a nice frothy batter.

 

Preheat the oven / microwave to 180 deg C. Take a microwaveable dish, grease well with butter, add the egg batter and bake for 7-8 minutes. The omelette pie should be ready by then.

 

Parallely we sauted some nice chilly sausages in olive oil, juliennes of dried ginger and few rosemary leaves, just till the sausages turned a lovely golden brown. In the same pan we sauted some mushrooms and cherry tomatoes. Remember not to overdo the cherry tomatoes, or else they will split.

 

Remove the above goodies from the pan. Chop some tomato rings, lightly saute in the pan, and then cook directly over the flame for that slightly yummylicious smoky flavour.

 

Serve with breads, marmalades, fruits and juices of choice.
