Like all other urban parents, our weekends are usually dotted with play dates, evenings at the beach or back to back marathons of the man of the moment-Chhota Bheem ( This guy rules our lives!)

This Saturday when the sister took some time off, the little devil was itching to go off to Nani’s, all to spend a night of being spoilt silly! I’m a working mother, and I prefer being with my daughter all through the weekend. But then, its been long since we spent some ‘just us’ time. Really long. So we packed her off and boy, was she excited or what!

As for us,well we decided to stay in- dig into some good food,  catch a nice movie and talk…yes talk.Funny as it may sound, we hardly find the time to talk.

As  a special, we created a date night platter – Rum & Coke glazed chicken, fries, salad & mango salsa. All downed with some seriously chilled beer.

Date Night : Rum & Coke Chicken


  • 4 chicken legs
  • 300 ml Coca-Cola
  • 1 1/2 cup dark rum
  • 5 cloves garlic
  • 1 inch ginger
  • 2 green chillies finely chopped
  • 2tsp freshly ground dry red chillies/chilly flakes
  • 2tsp oregano
  • 3tsp soya sauce
  • 1tsp black pepper
  • 2tsp barbeque sauce
  • 1/2tsp Tabasco
  • 2tsp brown sugar
  • Salt to taste
  • Oil


  • Mix all the ingredients except the sugar and 1/2 a cup of rum in a bowl
  • Pour over chicken, then marinate for 3-4 hours in the refrigerator.
  • Heat oil in a non stick pan over medium heat. Place chicken in the pan, and fry for 5 minutes, or until done on each side.
  • When chicken is almost done, pour remaining 1/2 cup of rum over chicken.
  • Shake the pan vigorously to allow the rum to ignite. When the liquor in the rum has burned off, remove chicken from the pan and set aside.
  • Alongside empty the remaining marinade into another pan.
  • Add the brown sugar.
  • Let the sauce reduce till it achieves a glazy consistency.
  • Once the sauce is thick enough,tip in the chicken legs.
  • Toss the legs until they are well coated will all that yummy glaze

Serve with some nice cold lettuce salad,some fries and ofcourse some chilled beer.
